Graviera of Crete GYPAS PDO
Hard cheese from pure sheep milk and at least of a 3-month ripening process. Cheese with full and slightly spicy flavor. Choose it to uniquely accompany a glass of wine with fruit, rusks and breadcrumbs. Try it in a saganaki recipe, grated into various dishes or plain as a table cheese.

It is produced from the graviera whey, adding fresh milk as well as fresh anthotyro and then it is left to mature with the help of the time when its moisture is removed.
Grated, it accompanies excellent pasta dishes but it can be eaten plain making it a perfect meze with Cretan alcoholic drink tsikoudia.
