KALITSOUNIA FROM CHANIA (SALTY)

INGREDIENTS:

For the dough:
1 teaspoon of salt
1/2 coffee cup of olive oil
1 glass of lukewarm water
Flour for all uses (as long as it rises for a soft dough)

For the stuffing:
1 kg of chopped spinach
1/2 kg of myzithra or anthotyro cheese
1 dry onion finely chopped
Mint, fennel
Salt, pepper, some oil

For the spreading:
1 egg whipped with a little water
Sesame

RECIPE EXECUTION:

We put in a bowl the finely chopped spinach, onion, mint, fennel, myzithra or anthotyro cheese whatever we prefer or both, salt, pepper and some olive oil and we mix them to make a homogeneous mixture. We fill a dish with the mixture we made and we start. We make dough with the flour, oil, water and salt. With a rolling pin, we open a sheet not too thin. We cut the with the knife the sheet into squares. We fill each square that we cut with a tablespoon of the stuffing already in our dish. We fold the two opposite corners of the sheet.

We do the same with the other two corners, and we lightly press with our finger the kalitsouni in the center to "get stuck". We put them into a baking pan on which we have spread non-stick paper, we baste them with beaten egg and we sprinkle them with sesame seeds. We bake our
kalitsounia in a preheated oven at 180-200  for about 1 hour.
